Delicious and Healthy Eggless Banana Oats Bread

This is my take on the very famous Banana bread as an amateur cook! I have always been interested in baking and cakes is my go-to indulgences anyway! So why not try to find an healthier substitute to these cravings and also something that I can share with my folks as well. So here comes a tasty and comparatively nutritious recipe of a cake/ bread that can be made from simple ingredients at home and is made without spending hours in the kitchen!

Ingredients:

  • 2 ripe bananas

  • 1 cup powdered rolled oats

  • 1 cup whole wheat flour

  • 1/2 cup melted butter (or any neutral oil)

  • 1/2 cup milk (any type of milk)

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 6 tbsp jaggery powder

  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 356°F (180°C) and grease a loaf pan.

  2. In a large bowl, mash the ripe bananas until smooth.

  3. Add the jaggery powder and the butter. Whisk in thoroughly the ingredients until combined.

  4. Sieve in the oats flour, whole wheat flour, cinnamon, baking powder, and baking soda. Add in the milk. Mix well until all the ingredients are combined.

  5. If desired, fold in the chopped nuts or chocolate chips for an extra burst of flavor and texture.

  6. Pour the batter into the greased loaf pan and smooth the top with a spatula.

  7. Top it up with pieces of nuts/ bananas/ chocolate for garnishing.

  8. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

  9. Remove the bread from the oven and let it cool in the pan for 15-20 minutes.

  10. Transfer the bread to a wire rack to cool completely before slicing and serving.

If you’re not using chocolate chips, my husband recommends adding a small dollop of Nutella/ any chocolate butter available at home for a certain guilty pleasure (yes, for the remotest of times!). You can also adjust the sweetness by adding more or less jaggery powder according to your taste preferences.

This homemade bread is not only healthier than store-bought options but also allows you to control the ingredients and avoid any unnecessary additives or preservatives. Plus, it's a great way to use up those overripe bananas sitting in your fruit basket. The bread can be stored in an air-tight container for up-to 5 days!
