Ingredients: 

  1. Pearl Millet (Bajra) flour - 1/4 cup 

  2. Yellow moong lentils - 1/4 cup 

  3. Split chickpea (chana) lentils - 1/2 cup 

  4. Green chilies - 2 nos. (or as per taste)

  5. Cumin seeds - 1 tsp 

  6. Black salt/ regular salt - as per taste 

  7. Ginger - 1/2 inch piece

  8. Water - 1 to 2 tbsp

  9. Oil - for frying 

     

Preparation:

  1. Soak the lentils - wash them 3 to 4 times with cold water/ running water and then soak them overnight (or for 6-8 hours) with enough amount of water. You can soak both the lentils together. 

  2. After soaking, remove the water and then wash them once again. Put them in the mixer-grinder along with the salt, cumin seeds, ginger and green chilies. 

  3. Grind this mixture into a thick paste and remember to not use any water initially. This should ideally be done with time gaps in-between (pulse-mode) and not continuously. 

  4. Now, add the pearl millet flour along with1 or 2 tbsp of water and grind the mixture again. Use water in the quantity only what is required for grinding and no lumping. 

  5. After thorough grind, transfer the contents into a bowl. Now beat the mixture with a spoon or spatula to incorporate the air into the batter. Keep on doing this process until the mixture becomes fluffy and there's a change in the color from darker to lighter shade. This step is essential to give the signature textural profile to the ram laddoos. 

  6. Now heat the oil in a separate pan/ kadhai for frying. Once it is heated enough (keep on low to medium flame), form small balls of the batter with your hand and put them into the hot oil for frying. Instead of frying, you can use an air-fryer or bake them in the oven also for a healthier option. At 180 degree C, it should take about 12-15 minutes for them to cook.

  7. Fry the laddoos till they turn golden brown. You'll observe that they will fluff up as well as they cook to perfection. 

  8. Once fried, take them out of the kadhai / pan and pat them dry with the napkin. 

  9. Serve them hot and crisp. One of the most popular serving methods involves pairing Ram Laddoo with vibrant green chutney (made with mint-coriander and radish leaves), which adds a tangy and spicy contrast to the dish's mild nuttiness. The freshness of the chutney elevates the laddoo, making every bite an explosion of flavors.
