Shortbread is a traditional biscuit from Scotland, being prepared since the 12th century. It mainly consists of just 3 ingredients - butter, sugar and flour. It does not have any leavening agent and is famous during the festival season, especially around Christmas holidays. Due to butter, the biscuit has a crumbly texture, hence its name. In this version of the recipe, the wheat (refined or whole) flour has been replaced with little millet flour. Little millet is gluten-free, making it an excellent alternative for those with celiac disease or gluten sensitivities. Its nutritional profile is quite remarkable, showcasing a plethora of health benefits.   • Vanilla extract - 1/2 tsp (optional)

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, cream the softened butter and powdered sugar together using a hand mixer or whisk until the mixture is light and fluffy. Leave a little bit of the sugar for sprinkling on the top.
