Sunnundalu is a traditional delicacy hailing from the rich cultural tapestry of Andhra Pradesh, a state in southeastern India. This delectable dish, with a healthier twist, is primarily made from split black gram lentils (without the outer layer) and foxtail millet, a nutritious grain that has been cultivated for thousands of years. Foxtail millet is known for its numerous health benefits, including being gluten-free, high in fiber, and an excellent source of essential nutrients. Foxtail millet, a traditional grain widely cultivated in Andhra Pradesh, offers an impressive nutritional profile that significantly promotes overall health. The other ingredients used in preparing this recipe are sugar/ jaggery, a variety of nuts, and cardamom. Jaggery, a natural sweetener made from unrefined sugarcane juice, can be added to impart a rich sweetness and a distinctive flavor to the dish. Nuts such as peanuts or cashews are often included, lending a delightful crunch and enhancing the nutritional profile of the sunnundalu. The growing emphasis on healthy eating has revived interest in the ancient millet grains, making Foxtail Millet Sunnundalu not only a cherished dish but also a symbol of nutritional wisdom.

Ingredients (makes 8 to 10 bite-sized laddoos): 

  1. Foxtail millet flour - 1/4 cup

  2. Split black gram lentils (without covering) - 1/4 cup

  3. Jaggery (powdered or grated) - 3 tbsp 

  4.  Clarified butter (Ghee) - 2 to 4 tbsp 

  5. Green cardamom - 2 to 3 nos. / cardamom powder - 1 to 2 tsp

  6. Chopped almonds/ nuts of choice - 1 tbsp (for garnishing)

Preparation method:

  1. Rinse the lentils at-least 3 - 4 times under running water to remove any impurities. Now, spread the lentils on a kitchen towel/ napkin and let it get air-dried in the room or under the sun for at-least 2 to 3 hours.

  2. Take a kadhai/ vessel with a thick bottom and put it on low flame. After it is heated slightly, add in the foxtail millet flour for roasting.

  3. Roast the flour until it turns aromatic, the color should also change to golden-brown. This will take about 5 to 6 minutes.

  4. After the flour is roasted, take it out in a plate and let it cool.

  5. Now, take the dried lentils and roast them in the pan/ vessel on a low flame. Make sure that they turn aromatic and golden-brown. This will take about 6-8 minutes.

  6. Take the lentils also out of the pan and let them cool down for a while. After that, grind them into a thick powder, making sure it is neither too fine, nor too coarse.

  7. In the meantime, pound the green cardamom in the mortar and pestle to form a powder.

  8. Once ground, mix in with the flour, jaggery powder, and the ground lentils. You can directly skip step 7 and add cardamom powder at step 8, if using just the powder.

  9. Thoroughly mix the ingredients with hand for an even mixing. Side by side, heat the clarified butter (ghee) until warm (and not too hot) and slowly pour 1 to 2 tbsp in the dry mixture.

  10. Now, start mixing all the ingredients with your hands, combining them together as you keep on mixing them. Add the clarified butter as per requirement, so that the dry ingredients start giving the texture of a wet sand.

  11. Further add the clarified butter so that the contents start to come together. Shape the laddoos in the desired size with your fingers as you begin to press down the mixture in your palms. As the clarified butter begins to cool down, they will start to hold the shape.

  12. Cool them completely. They can be stored in the refrigerator for long or can be savored immediately! Garnish with nuts of choice and enjoy!

There are numerous variations of foxtail millet sunnundalu that cater to diverse tastes. Try adding desiccated coconut or using coconut sugar for a flavor enhancement. For a hint of spice, one can add a hint of spices like nutmeg or cinnamon, into the mix, adding to its complexity of taste. Additionally, the dish can be enriched with dried fruits and nuts such as almonds, cashews, or raisins, providing both texture and nutritional benefits.
