Ingredients (makes 2 small servings):
Apple - 1/2 (large size)
Foxtail Millet Flour - 1/4 cup
Powdered White Sugar/ Brown Sugar - 3 tbsp (1 tbsp for apples, 2 tbsp for topping)
Lemon juice - 1/2 tbsp
Nutmeg powder - 1/2 tsp
Cinnamon powder - 1/2 tsp
Salt - 1/2 tsp
Cornstarch - 1 tbsp
Baking powder - 1/2 tsp
Butter - 20 to 25g
Vanilla extract - 2 tsp
Milk - 1.5 tbsp
Curd/yogurt - 1/2 tbsp
Almond crumbs - 1 to 2 tbsp (for topping, optional)
Preparation:
Peel the apple and cut it in thin slices.
Transfer it into a large bowl and add the lemon juice, sugar (one part), cornstarch, cinnamon powder, nutmeg powder and vanilla extract. Toss gently but thoroughly.
Arrange these apple slices into a baking dish. Put a little bit of butter on top; distribute.
In another bowl, mix together the millet flour, sugar, baking powder and salt.
Now take the milk and mix with the curd/ yogurt. Add it into the dry mixture along with the left butter and mix thoroughly to form a moistened mixture, somewhat like a thick batter or a whipped cream.
Scatter this over the coated apples and allow it to settle. You don't need to distribute it evenly or coat, let it come as such, in dollops if may.
Top it with the almond crumble (crushed almonds), if desired. Side-by-side, preheat the oven at 180 degree C.
Keep the baking dish in the oven and bake for about 35-40 minutes at 180 degree C or until the filling is bubbling around the edges and you can get a clean knife when perforating.
