  •  6 tablespoon foxtail millet flour

  • 2 tablespoon softened butter 

  • 4 tablespoon ground jaggery or brown sugar (adjust to taste)

  • 2 eggs

  • 2 teaspoon baking powder 

  • 2 to 3 teaspoon milk 

  • A pinch of salt

  • Ghee or oil for greasing

  • 10 tablespoon fruit jam of choice (8 tablespoon for the recipe, 2 tablespoon for garnishing)

  • Vanilla custard for serving 

Steps:

  1. In a bowl, mix the foxtail millet flour, ground sugar/ jaggery, baking powder and salt. 

  2. In a separate bowl, whisk the eggs. Then, slowly add the softened butter and fruit jam of choice. Mix well. 

  3. Add the wet ingredients to the fry mix and fold in gently, Letting the air get incorporated into the batter. Add milk at this stage to adjust the consistency (like a cake batter).

  4. You can directly microwave it at 180 degree C for 30-35 minutes until it becomes golden-brown on the top and serve with custard as such, like a cake. 

  5. For original Roly-Poly recipe, steam it in the steamer for about 8 to 10 minutes till it fluffs up and holds its shape. 

  6. Allow it to cool before serving it with a dollop of fruit jam on top and vanilla custard (or custard of choice). Enjoy!
