Ingredients (serving size - 6 to 8) :

For the homemade mascarpone cheese -

  1. Full-fat cream (homemade or store brought) - 200ml

  2. Salt - a pinch

  3. Lemon juice - 2 tbsp

For the foxtail millet ladyfingers -

  1. Foxtail millet flour - 1 cup

  2. Butter - 50g

  3. Vanilla extract - 1 tsp

  4. Powdered sugar - 1/4 cup

  5. Whipping cream - 2 tbsp (or about 30 ml)

  6. Milk - 6 tsp (or about 30 ml)

  7. Baking powder - 1 tsp

  8. Salt - 1/2 tsp

  9. Powdered sugar (optional) - for dusting

For the filling -

  1. Whipped cream (sweetened) - 100g

  2. Mascarpone cheese - 150g

  3. Powdered sugar - 25g

  4. Vanilla extract - 1 tsp

For assembly -

  1. One shot espresso - 3 shots (30 ml each; cooled to room temperature)

  2. Cocoa powder (for dusting) - 2 to 3 tbsp

Step-by-Step Preparation Method:

For the homemade mascarpone cheese -

  1. Take the cream in a cooking vessel and let it heat. When it is about to come to a boil, add a pinch of salt and mix thoroughly.

  2. Now add in the lemon juice and mix well. Switch off the flame and let the cream curdle. Separate out the curds in a muslin cloth and remove the whey with the help of a sieve.

  3. Now, let the curds cool down in the refrigerator for sometime.

  4. Blitz it in a mixer-grinder for a smoother and fluffier texture. Your homemade mascarpone cheese is ready.

For the ladyfingers -

  1. In a bowl, add sugar, room temperature butter, and vanilla extract and whisk thoroughly.

  5. Preheat your oven to 180°C. Bake for around 12-15 minutes or until golden brown. Allow them to cool completely.

  1. In a bowl, combine the homemade mascarpone cheese, cooled whipped cream, sugar and vanilla extract. Beat the mixture using an electric mixer until smooth.

  2. If you are using whipping cream (and not whipped cream), then beat the whipping cream first to achieve soft peaks as you slowly add the powdered sugar and the vanilla. Then add the mascarpone cheese and fold in the contents gently to maintain the light and fluffy texture of the filling.

Assembly and serving -

  1. Now it’s time to assemble the dessert. Begin by dipping each foxtail millet ladyfinger briefly into the coffee shots.

  2. Layer them at the bottom of a serving dish, ensuring an even base.

  3. Spread a portion of the filling over the ladyfingers, smoothing it out gently.

  4. Repeat this layering process, alternating between layers of ladyfingers and cheesecake filling, finishing with a layer of the filling on top.
