Nankhatai
Have you ever tried nankhatai? These delightful Indian shortbread biscuits are a staple in many households, especially during festive seasons. Nankhatai, with its crumbly texture and melt-in-the-mouth goodness, is reminiscent of childhood memories for many. But what if we could give this beloved treat a healthy twist? That's exactly what we're doing today! So, the traditional nankhatai recipes typically call for all-purpose flour, ghee (clarified butter), sugar, and sometimes semolina or chickpea flour. While delicious, these ingredients might not be the healthiest options for regular indulgence. So, here’s a version of homemade nankhatai that substitutes some of these elements with healthier alternatives without compromising on taste.
Ingredients:
Let's get started by gathering the ingredients:
3/4 cup whole wheat flour
1/4 cup almond/ refined wheat flour
1/2 cup coconut oil (solid form) or ghee
1/3 cup jaggery powder (or 1/2 cup coconut sugar)
1 tsp baking powder
1 tsp curd/ yoghurt
Cardamom powder (optional, for extra flavor)
Nuts for garnish (optional)
Step-by-Step Recipe:
Follow these simple steps to make your healthy homemade nankhatai:
Preheat your oven to 340°F (170°C) and line a baking tray with parchment paper.
In a mixing bowl, mix together the coconut oil or ghee and jaggery powder/ sugar until the mixture is smooth.
Sift in the whole wheat flour, refined wheat flour/ almond flour, and baking powder. Mix until a dough forms.
Add the curd/ yoghurt and if using add the cardamom powder for that wonderful aroma and flavor.
Divide the dough into small, equal-sized balls and gently flatten them into discs.
Place the discs on the prepared baking tray, spacing them slightly apart. Add nuts on top for garnish if desired.
Bake in the preheated oven for about 12 - 13 minutes or until the edges turn golden brown.
Allow the nankhatai to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
Time to Enjoy: Your healthy nankhatai are now ready to be enjoyed! These biscuits are perfect with a cup of chai or as a snack any time of the day. The almond flour adds a lovely nutty flavor, while the jaggery provides a natural sweetness, making these biscuits not only tasty but also nutritious.
Trying this homemade nankhatai recipe with a healthy twist can add variety to your baked goodies list. Plus, it's a great way to enjoy a traditional Indian treat guilt-free. Happy baking!
