Ingredients: 

  1. Little millet - 1/8 cup

  1. Jaggery - 2/3 cups

  2. Sesame Seeds - 1/8 cup

  3. Water - 1/4 cup

  4. Baking soda - a pinch

  5. Ghee/ any other oil - 2 tbsp

  6. Chopped nuts - a handful (optional)

  7. Chopped Rose Petals - 1 tbsp (optional)

Preparation:

  1. Begin by washing the little millet thoroughly under fresh running water. Pat it dry with a kitchen towel and then allow it to cool overnight or for some hours under the fan to completely dry it.

  2. Now, dry roast the little millet in a pan over low heat. Roast until it turns golden brown and releases a pleasant nutty aroma. This step enhances the flavor and texture of the chikki.

  3. In a separate pan, dry roast the sesame seeds until they turn golden. Set both roasted ingredients aside to cool.

  4. Next, prepare the jaggery syrup. In the same pan, add the jaggery along with a cup of water and bring it to a boil. Stir continuously until the jaggery dissolves completely. Add a tablespoon of ghee at this stage.

  5. Once dissolved, reduce the heat and simmer until the syrup reaches a one-string consistency, which is essential for binding the chikki together. Add the baking soda (if using), at this stage.  

  6. After achieving the desired consistency, mix in the roasted little millet, sesame seeds, and nuts of choice. Stir well to ensure that all ingredients are evenly coated with the syrup. Quickly transfer the mixture to a greased tray and spread it out evenly using a spatula. You can use a rolling pin to flatten it, if desired.

  7. Allow the chikki to cool for about 30 minutes before cutting it into desired shapes. To prevent sticking, make sure to grease your knife or blade.
