I am writing this recipe here after having gotten such positive reviews about this one from a couple of people. And to be very honest, I am not a vegan or specifically a vegetarian when it comes to my food choices, but since I was having a lot of almonds sitting on my kitchen counter and I didn't want to make almond milk, some grooving through the internet recipes and Viola! Here I am with my own improvised recipe depending on the easily available ingredients in the house. These homemade almond and honey cookies are not only vegan, but they are also gluten and sugar-free. Packed with the goodness of almonds and the natural sweetness of honey, these cookies are a guilt-free indulgence that you can enjoy anytime.
Ingredients:
2 cups almond flour
1/2 cup melted ghee/ coconut oil
1/2 cup honey
1 teaspoon vanilla extract
Pinch of salt
1/4 teaspoon baking soda
Chocolate chips/ chocolate pieces
Instructions:
Preheat your oven to 350°F (175 or 180°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the almond flour, salt, and baking soda.
Pour in the oil to these dry ingredient mix slowly and then whisk together slowly.
Add in the honey and vanilla extract with slow mixing until the ingredients are fully combined.
You can add in the chocolate chips at this stage if you want and mix the batter thoroughly.
Using a tablespoon or a cookie scoop, drop spoonful of the dough onto the prepared baking sheet.
Bake for 12-14 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for sometime until they are cool completely.
These almond and honey cookies are perfect for a quick snack or a sweet treat. The almond flour adds a nutty flavor and a nice texture, while the honey provides a natural sweetness as well as a binding/ sticking capacity to the almond flour (since there is no gluten). You can also use almond meal instead of almond flour here. The essential difference between the two is that almond meal is made up of grounding the regular almonds with skins on but in case of almond flour, the almonds are ground with their skins removed. Almond meal is slightly higher on the fiber and mineral content and is a good choice for this recipe as well. The best part about this recipe is that is that they are free from gluten, eggs, and refined sugar, making them suitable for those with dietary restrictions or anyone looking for a healthier alternative.
Feel free to get creative with the recipe by substituting honey with maple syrup, jaggery powder or coconut sugar for healthier alternatives or by adding your favorite mix-ins such as chopped nuts, dried fruits instead of just chocolate chips. You can also experiment with different types of flour, such as oat flour or coconut flour; suit your preferences and to what is available in the kitchen!
