Ingredients (2 servings)-

  1. Proso millet grains - 1/4 cup

  2. Chana dal - 1/4 cup

  3. Turmeric powder - 1 tsp

  4. Salt - as per taste

  5. Cumin powder - 1.5 tsp

  6. Red chili powder - 1 tsp

  7. Garam masala - 1 tsp

  8. Bay leaf - 1 no. (small)

  9. Cloves - 2 nos.

  10. Green cardamom - 2 nos.

  11. Cinnamon stick - 1/4 inch piece

  12. Biryani masala - 1 tsp

  13. Onion (small, julienned) - 1 no.

  14. Garlic (chopped) - 5 to 6 nos.

  15. Ginger (julienned) - 1/2 inch piece

  16. Green chili (chopped) - 1 no.

  17. Curd/ Yogurt - 2 tbsp

  18. Lemon juice - 1 tsp

  19. Vegetables (carrots, peas, mushrooms; chopped) - 1/4 cup (optional)

  20. Water - as per requirement

  21. Coriander and mint leaves - a handful, chopped

  22. Oil/ Ghee - for frying

Instructions -

When preparing Hyderabadi Qubooli Biryani with proso millet, the cooking techniques play a vital role in achieving the desired flavor and texture.

  1. Begin by rinsing the millet and the lentils thoroughly under running water, separately, to remove any impurities. Next, soak the millet grains for approximately 30 minutes and the lentils for at-least 4 hours or overnight, to enhance its cooking quality and reduce the cooking time.

  2. While the millet is soaking, you can proceed with the marination of your choice of vegetables or meat. For a delightful vegetarian option, a mix of seasonal vegetables with yogurt, ginger and garlic, and green chilies, and a blend of spices like cumin, red chili powder, and garam masala. If opting for meat, consider using chicken or lamb, similarly marinated to enhance its flavors with the aromatic spices typical of Hyderabadi cuisine.

  3. After the millet has soaked, drain it and set it aside. In double the amount of water, cook the millet grains on slow flame, partially covered with a lid, till they are almost cooked (should be able to break between fingers while still leaving a raw dent). Make sure that they are not fully cooked, the rest of the cooking process takes place in the biryani preparation. 

  4. Using a pressure cooker, cook the lentils under pressure till they are soft. Make sure that when you take them out of the pressure cooker, they can be mashed between your fingers. Cool them and set them aside.

  5. In a large pot, heat some oil or ghee and add sliced onions, cooking them until golden brown. This step adds a distinctive richness to your biryani. Layering techniques are crucial; therefore, once the onions are ready, add the marinated ingredients and brown them lightly. This initial cooking helps seal in the flavors.

  6. Next, layer the partially cooked proso millet over the marinated mixture, followed by the cooked lentils, laying as you go. Make as much layers as possible with the available contents. For added fragrance, you can place whole spices like bay leaves, cardamoms, and cloves. Cover the pot with a tight lid to allow the biryani to steam effectively, which is essential for perfect texture. Cooking on low heat for about 20–25 minutes will ensure that the millet is fluffy and fully cooked.
