Inspired from the Sicilian Watermelon Pudding (Gelo de Melone), the Little Millet Watermelon Pudding is an innovative dessert that beautifully combines the subtle flavors of watermelon and the unique texture of little millet milk, that is prepared as a part of the base. This dish not only tantalizes the taste buds but also introduces an unexpected twist to traditional pudding recipes. Traditionally, the pudding is infused with jasmine and garnished with pistachios or chocolate. We are going to make our own crumble with millet biscuits, pistachios and some brown butter for the nutty taste - a flavor combination that works wonders in this recipe! This is a layered pudding, with a watermelon pudding on top and a millet milk-based pudding at the bottom.

  • Watermelon (diced; sans seeds) - 2 cups

  • Little millet grains - 1 cup 

  • Sugar - 1/4 cup (1/8 cups each for millet milk and watermelon juice separately)

  • Cornstarch - 6 tbsp (3 tbsp for each watermelon and millet milk pudding)

  • Unsalted butter - 1/8 cups 

  • Pistachios, roughly chopped - a handful

  • A pinch of salt

  • Millet biscuits (crumble) - 2 nos. (check for any millet based cookies on the website)

  • Water - 1/2 cup 

  • Coconut extract/ Vanilla extract - 2 to 4 drops (optional)

  • Fresh mint leaves for garnish

Once you have gathered these ingredients, follow the subsequent steps for preparation:

  1. Preparation of Millet Milk: Rinse the little millet under cold water until it runs clear and keep it soaked in water, overnight. The next morning, grind the little millet grains along with the water they were soaked in to form a paste as smooth as possible. Repeat the process twice, topping up with a little bit more water, if required. Strain through a fine muslin cloth/ strainer to separate out the milk from the husks/ leftover grain particles. Your millet milk is ready.

  2. Blend the Watermelon: Take the diced watermelon and blend it in a blender until smooth. You may strain the mixture for a smoother consistency if preferred.

  3. Cook the millet milk for the pudding base: In a saucepan, add the millet milk and keep it on the stove at a low flame. As it slowly begins to cook, add the sugar and cornstarch and mix thoroughly. Let it thicken to form a velvety pudding-like-texture, but still runny. Remove from the flame and add the extract for flavorings of choice, if using. Let it cool and then transfer to the bowl/ ramekin/ dish you want the pudding to set into. Once cooled completely, keep it in the refrigerator for setting, for about 3 to 4 hours. 

  4. Prepare Brown Butter: In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and develops a nutty aroma, around 5-7 minutes. Remove from heat immediately to prevent burning.

  5. Make the Pistachio Crumble: In a separate pan, lightly toast the chopped pistachios for a few minutes until fragrant. Combine with the brown butter and crumbled pieces of cookies/ biscuits, stirring to coat the nuts evenly. Allow to cool.

  6. Cook the watermelon pudding layer: Take the watermelon juice in a saucepan, keeping it on a low flame. Add the sugar and cornstarch and allow it to thicken. Once the desired consistency is reached, switch off the flame and let it cool a bit, almost to the room temperature before putting it on top of the millet milk pudding layer, already set in the refrigerator. Keep the whole pudding for additional 2-3  hours in the refrigerator or until set. 

  7. Layer: Now, your components for the sweet and creamy little millet watermelon pudding are ready. Assemble your pudding by layering the crumble over top of the servings and enjoy your confection!
