Ingredients:

  1. Proso Millet Flour - 1/4 cup 

  2. Salt - as per taste 

  3. Water - 1 to 1.5 cups 

  4. Crushed Black pepper - as per taste

  5. Sugar - 1/2 tsp 

  6. Dried oregano - 1/2 tsp 

  7. Dried red chili flakes - 1/2 tsp 

  8. Cumin powder - 1/2 tsp (optional) 

  9.  Sun -dried tomato powder -  1 tbsp 

  10. Sun-dried garlic-green chili-onion-ginger powder - 1/2 tbsp

Preparation: 

  1. Firstly we will prepare the sun-dried ingredients. Cut the thin slices of tomatoes in a tray; similarly cut the onions, garlic, ginger and green chili in a separate tray. Keep both the trays in the sun and let them dry. This should take about 2 to 4 days, depending upon the location and weather. Make sure that both the trays are separate and at a distance to each other so that their aromas do not intermix.

  2. After they are sun dried, take the tomatoes separately and grind them into a fine powder in a mixer/ grinder. Similarly, grind the dried ginger, garlic, green chili and onions together in a grinder to form a coarse to fine powder (depending upon your preference).

  3. Now, to prepare the premix, add in all the dry ingredients and mix together thoroughly. Your premix is ready and can be stored in an air-tight container for about 3 months at a refrigerated temperature.

  4. To make the soup from the premix, take a container/ pan and add in some water to boil. A ratio of 4:1 is required, that is for 1 cup of premix, 4 cups of water is essential.

  5. Simultaneously, in a separate bowl, form a slurry of the premix with some water ensuring no lumps are formed.

  6. As the first bubble appears in water, add the mixed slurry and stir continuously. Ensure that no lumps are formed as the lumps start to appear when the flour is slowly cooked, so make sure it is stirred continuously.

  7. Let it boil on a simmer. This will take just about 2 minutes or so.

  8. Mix well and adjust the consistency with water depending upon the thickness that is desirable to you.

  9. Switch off the flame. Take out the soup in the soup bowls. Garnish with dried oregano, fresh coriander leaves or some croutons. Serve hot and enjoy!
